Black Quinoa, Red Cherry, and Green Spinach Salad with Toasted Cashews and Mint
-an absent girlfriend
-sudden culinary inspiration that couldn’t have possibly waited until her return
-black quinoa that she brought to your house
-oh yeah, and the red cherries she bought the day before she left
-I bet she bought that spinach, too
-though she’s secure enough to admit that you bought the cashews and the mint
-feta is always your idea, and it’s always a good one (secure enough to admit that, too)
Toast cashews on a baking sheet at 400 degrees with oil, salt, pepper, etc., for about 10 minutes. Cook the quinoa (2 parts quinoa to 3 parts water) and mix it together with the spinach. Halve and pit the cherries and add them to the mix, along with the cashews. Chop mint and sprinkle over the top, and then add some crumbled feta for good measure. Now take a picture and email it to me with the subject heading: “Oh yeah!!! Oh yum!!!” Call me later to rub it in. Make me insanely, insanely jealous of your new salad paramour. Ensure that I will never leave town again.
