neufchâtel and calmyrna figs on whole wheat

I normally don’t like sandwiches, but wolfed this one down before I even had a chance to photograph it. Alas, I guess I’ll just have to make another one tomorrow, improved with a drizzle of honey and a few mint leaves. Ever notice how mint seems to proliferate in the fridge? I think I’m halfway through it after making a fruit salad and then, boom: I open the crisper, and it’s still a jungle in there. Serves me right for not growing my own. Then again, maybe I’ve been privy to a modern day mint miracle, and will need to revise my views on religion.

Who am I kidding? Food is my religion.
